Finally Better!
Man, let me tell you, I have been SICK! But I'm on the road to all better :)
It all started last week with the sore throat, that turned into what I thought was just a cold, but was more than likely a sinus infection. Just as I thought I was kicking its butt on my own I got a double ear infection!! Can you believe it!? I haven't had one of those in...in...a long time! I had them bad as a kid, and had to have PET tubes twice, but never again since. Those bad boys hurt! No wonder all the kids are crying when they come in with them, I was almost crying! Then my lovely doctor gave me hydrocodone and all was good....until it came to actually getting the rest she also prescribed. Hydrocodone does not make me drowsy as it is supposed to, it actually keeps me from sleeping, so that sucked. I took that for the first two days to keep the pain away, but now I'm just doing the Zpack. My right ear is still corked up, but other than that I'm feeling so much better! And I better get all the way better fast b/c I've got the Cary Road Race with Xander's Mom in 1 week!
So that is what's been going on with me, fun right?!
Now back to this stack of refunds that is staring me down! Wish I could send one to all of you :) ....and me included, lol! At least tomorrows payday!

You've got two options Buddy!
So, the next time I talk to Seth I'm gonna say "Pick A or B for dinner". I'm not going to tell him what A or B stands for, because I know he'll like both, but I need him to pick because I am incapable of making decisions :) At least I can admit it!
Option A is French Onion Soup (and I wish I was using this recipe, but since we have 4 cans of it in the pantry, I'm going to use what we have)
Option B is Tilapia with Pimiento Sauce from here. (We have about 4 cans of olives in our pantry as well)
I'm really excited about both of these recipes!
**UPDATE: He picked A! And when he convinced me to tell him what he had chosen he was so excited!! I haven't told him what B is, but he guessed that it includes seafood. We will have that tomorrow night.**

Fun in the Sun
This past weekend Seth and I headed to Topsail to visit some good friends and somewhat distant neighbors at their new beach cottage. We had such a fun time!! The weather was absolutely gorgeous and the company was even better! I am the worst though, because I never remember to bring my camera to take pictures with, grrr. We could have taken Seth's, but we forgot that too. Actually, even if I had remembered mine, I couldn't have used it because the battery is dead and I can't find the charger, double grr! But we did realize the we have the exact same camera as they do, random!
Anyway, we had a great time. Seth fell in love with the home cooked enchiladas we had for dinner Friday night! Saturday we played Botchie (sp?) ball on the beach and learned how to fly a kite surfing training kite, which was a lot of fun too. Ahhh, to be near the beach....
That leads me to an important question, why is it that we can have 80 degree weather one day, and the next be back inthe 40's!?!?!? There should be a cosmic law against that! So wrong! I've decided I'm going to copy the birds and start flying South for the winter. Anyone care to join me? :)

Yum!
So remember that meal I made Sunday night?? Well I took the leftover chicken and vegetables and made a potpie out of it last night! It was so good an easy! All I did was heat the chicken, vegetables, a little velveeta, a splash of milk and some cream of mushroom soup in a pot while I made the crust for the potpie. Once the crust was done I put it in my casserole dish, filled it with the mixture, and baked for about 15 minutes! MmmmmMmmmm! It was good! But of course...what I packed for lunch today I left at home :( Dangit! Doesn't that always happen? So now my only chance to eat it again will be tomorrow for lunch. At least I have a new yummy recipe under my belt to use at will! I should have taken a picture it was so pretty! Next time I will, promise :)

My Birthday!!
Yesterday was my birthday!!
It was such a great day! My husband greeted me first thing in the morning with hugs and birthday wishes, then proceeded to serenade me with the birthday song while gargling Listerine! LOL! He is so funny! I got so many calls, emails and well wishes throughout the day. It was so nice :)
Seth also sent an Edible Arrangement basket to my work and it was soo yummy and pretty! It had strawberries, chocolate covered strawberries, grapes, pineapple, cantalope and honeydew! It didnt last long at all!
Then when he picked me up from work he suprised me with a bouquet of flowers and a cute card with personalized drawings of our family, lol. It was sweet.
On the way home he stopped and got me a chocolate shake from Sheetz, which is my new favorite stop for ice cream.
We went to dinner at BullFeathers and enjoyed some yummy wings and beer. I had honey BBQ and Seth had boneless parmesan. Then on the way home he stopped and got me another chocolate milkshake, but that one was mostly b/c I had a really sore throat all yesterday (and still do today). I'm hoping it goes away and doesn't turn into anything though b/c we have plans to go visit Grace and Joel in Topsail this weekend! It's going to be such a good time!!!! I can't wait!
Sunday night we had another birthday celebration. Since PB and I share a birdthday I hosted a birthday dinner for us. All together there were 11 of us, my dining room was packed! I made to roast chickens (one stuffed with stuffing, the other surrounded with vegetables), about 8 pounds of mashed red potatoes with sour cream, cream cheese, chicken bouillion and garlic powder, and a big pot of steamed broccolli, carrots, squash, red bell pepper, and green bell pepper. It was so good!! For dessert we had chocolate fondue! We had marshmellows, pineapple, bannanas and strawberries for dipping. It was great! I should have taken pictures, but I always forget and I still can't find the charger for the camera, grr!
OH! And, Seth is buying me Jeff Dunham tickets for his show in May at the RBC center!!! My honey really went overboard this year :)
But that's enough bragging about my birthday for now, even though there is still so much more to talk about, hehe.
This past Saturday I did my first 5K since last year! It was so much fun and my friend Selena came down and did it with me. I must admit that I didn't run the whole thing, but I think I did Ok for being as out of shape as I am. I'm going to be in better shape for the next one, which I believe will be....the Cary Road Race on April 4. I'm only going to do the 5K, I'm definitely not ready for the big leagues of the 10K!! LOL!!
Hope everyone has a great Hump Day!!
