Scotcharoos

Delicious!

If you have never tried them you are definitely missing out! My friend Grace introduced these to me a while ago and I have been in love ever since so I thought I would share :)

1 cup sugar
1 cup light corn syrup
1 cup peanut butter
3/4 bag milk chocolate chips
1/2 bag butterscotch chips

Heat sugar, syrup and peanut butter over medium until sugar melts (stir continuously as the sugar will burn)
Once smooth remove from heat
Stir in 6 cups of rice krispies
Pour this into a 13 X 9 greased pan
Even out by pressing down with wax paper
Melt chocolate chips and butterschotch chips stirring until melted and smooth
Pour over pan the flattened pan of rice krispies and smooth evenly
I put mine in the fridge for a little while after this to help the chocolate firm up quicker (aka, so I could eat it sooner!)

Update:

He GOT THE JOB!!!!!!!!!!!!!!


Woohoo!!! We are so excited! and I am so proud of my handsome husband! I knew he was the best candidate for the job and I'm so glad others saw that as well!

Congratulations to the new Operations Manager of the Raleigh District!
Now he just has to get over this cold so he can start kickin butt and taking names :)
God is Amazing and is definitely working behind the scenes in our lives!
Short side story that makes this even more amazing: Before Seth went on the Men's Hike awhile back he was very unhappy with his job and where he didn't feel it was taking him so he was very seriously persuing the air force. While on the men's hike one of his big questions to God was 'what do I do?' and God gave him this verse "Be still and know that I am God. Cease striving" (literally, a guy walked up to him and gave it to him). Even after such an obvious answer to his question he/we were struggling to come to terms with it, then things started unfolding with this position and look where we are now! Wow! It's amazing what our Lord can do if we just allow him to and put our faith in him! God Is Good!

Dinner and an Update

Let's start with the update: the interview went Great! In his own words he "nailed it!". We should find out this morning who they are choosing for the position so send up a prayer for us!

Dinner:
For dinner Monday night I made stuffed flank steak with mushroom gravy, steamed carrots and a salad. It was delicious! My dad passed the recipe to me recently and I just knew it would be good.

So start with a flank steak, cover it with plastic wrap and beat the crap out of it with whatever you have on hand. I used a rolling pin, previously I have used a can. This is to help break up the conective tissue since we are not marinating it. Next, make some chicken stuffing from Stove Top and have it to the side. Slice your steak length wise into individual portions. I did mine in 3, but should have done it in 5! Take a ball of stuffing and place it in the middle of a strip of steak, fold the ends around and pin them with a toothpick. Do this with the rest of the strips and stuffing. I lightly sprayed a 9x9 with cooking spray then placed the rollups in the pan. For the gravy, mix 1 can cream of mushroom soup, about 3/4 can of water and some worcestershire sauce. Pour the gravy over and around all your rollups. I cooked mine in a 425 oven for about 40 minutes. YUM!!!! They were so good! I think I would use a 13x9 next time so the heat can get in and around the rollups better b/c they were not evenly cooked. So good though, you must try it! And I will get a picture next time I make it :)

Cross Your Toes for BOGO

At lunch today I'm headed to Rack Room Shoes for their BOGO (Buy One, Get One half off) sale to hopefully pick up not one pair of new boots but TWO! I never replaced the boots that my dear lovely Shelby ate recently, and technically I never replaced the boots that my adorable Ford ate when he was going through his puppy phase either...so nows the time to replace both!

So cross your toes that they are as cute in person and that they fit so I can get them! I've already got the go ahead from Mr. Husband, so I'm really excited!

What a Week!

I don't know about you guys (but feel free to tell me!) but this week has been C.R.A.Z.Y.!

Our office is in full flu shot mode, both seasonal and H1N1, and boy is it busy! Monday I was only in for a half a day and I sure regretted that Tuesday when I got back in, there were mounds of claims to be entered. We had Life Group over for group/dinner last night and it was a really good time. I made lasagna, salad, garlic toast, and chocolate eclair squares, Yum! The we discussed the first half of 2Timothy before watching Seth's skydiving video (I'll try and get that up here soon) and calling it a night.
Today doesn't look too bad work wise, but I'm really looking forward to this weekend :)

Tonight we are going to Metro Lounge to see our friend John Brown spin some drum and bass.



Saturday we don't have any plans really, but its going to be such a gorgeous day I think I'll take the dogs to Harris Lake to have some fun.

Sunday night we are going to see DANE COOK!!! at the RBC Center! I'm so excited!!! My sister-in-law hooked us up with tickets to go with her and her husband, and we are going to have a blast!


What are y'alls plans for the weekend?

Oh, and I forgot to mention that I started the 30 day Shred by Jillian Michaels. Holy Moly are my calves sore! And what a wierd place to be sore right? I was hoping my abs, back, arms or even thighs would be sore, but no, just my calves. So I'm walking like a little old lady, but hopefully I'll see some good results!
